Ingredients
1 cup old-fashioned rolled oats
1/2 cup vanilla protein powder
1/4 cup almond flour
1/3 cup freeze-dried strawberries, crushed
3 tablespoons cream cheese, softened
3 tablespoons maple syrup or honey
1/2 teaspoon vanilla extract
1–2 tablespoons almond milk (as needed)
Pinch of salt
Instructions
- In a large mixing bowl, combine the oats, protein powder, almond flour, crushed freeze-dried strawberries, and a pinch of salt. Mix until well blended.
- Add the softened cream cheese, maple syrup or honey, and vanilla extract. Mix again until a thick dough forms.
- If the mixture is dry or crumbly, add almond milk one tablespoon at a time until the dough holds together.
- Using a small cookie scoop or your hands, roll the dough into 1-inch balls.
- Place the balls on a parchment-lined tray and chill in the refrigerator for at least 30 minutes.
- Store in an airtight container in the fridge for up to one week, or freeze for up to 3 months.
