Description

Nun's Puffs are soft, sweet, and puffy pastry bites, golden brown on the outside and light and airy on the inside, coated with a delicate cinnamon-sugar mixture. They are quick and easy to make and pair perfectly with tea or coffee.


Ingredients

1 cup water

1/2 cup unsalted butter

1/2 teaspoon salt

1 cup all-purpose flour

1 teaspoon ground cinnamon

4 large eggs

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/4 cup sugar (for coating)


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium-high heat, stirring until the butter melts.
  3. Once the mixture is boiling, remove it from the heat and stir in the flour and cinnamon. Mix until smooth and combined.
  4. Return the saucepan to low heat and cook, stirring constantly, for about 1-2 minutes to dry out the dough slightly.
  5. Remove the dough from the heat and let it cool for 5 minutes.
  6. Add the eggs one at a time, stirring well after each addition. The dough will become smooth and glossy.
  7. Spoon or pipe 1-inch mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 18-22 minutes, or until the puffs are golden brown and puffed up.
  9. While the puffs are baking, combine powdered sugar and vanilla extract in a small bowl.
  10. Once the puffs are done baking, let them cool slightly, then dip each puff into the sugar mixture to coat lightly.

Notes

For extra flavor, add a pinch of nutmeg or cardamom to the sugar coating.

These puffs can also be filled with whipped cream or custard for a richer treat.

If storing leftovers, keep them in an airtight container at room temperature for 1-2 days.

To refresh leftovers, warm them in the oven at 350°F (175°C) for a few minutes.
