Ingredients
2 cups rolled oats
2 medium apples, peeled, cored, and diced
1/2 cup almond milk (or any milk of choice)
1/4 cup maple syrup
1/4 cup coconut oil, melted
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/2 teaspoon baking powder
1/4 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking dish.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together the almond milk, maple syrup, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until fully combined.
- Gently fold in the diced apples and chopped nuts (if using).
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Bake for 35-40 minutes, or until the top is golden brown and the oats are set.
- Once baked, let it cool for a few minutes before serving.
Notes
For extra crunch, add walnuts or almonds.
Feel free to swap almond milk for oat or coconut milk.
For added spice, try a pinch of nutmeg or ginger with the cinnamon.
Maple syrup can be substituted with honey or agave syrup.
Try pears or berries instead of apples for a different flavor.
