Description

A warm and comforting oatmeal bake with the natural sweetness of apples, making it an ideal way to start your day on a nutritious note.


Ingredients

2 cups rolled oats

2 medium apples, peeled, cored, and diced

1/2 cup almond milk (or any milk of choice)

1/4 cup maple syrup

1/4 cup coconut oil, melted

1 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 teaspoon baking powder

1/4 cup chopped nuts (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  2. In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the almond milk, maple syrup, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until fully combined.
  5. Gently fold in the diced apples and chopped nuts (if using).
  6. Pour the mixture into the prepared baking dish, spreading it evenly.
  7. Bake for 35-40 minutes, or until the top is golden brown and the oats are set.
  8. Once baked, let it cool for a few minutes before serving.

Notes

For extra crunch, add walnuts or almonds.

Feel free to swap almond milk for oat or coconut milk.

For added spice, try a pinch of nutmeg or ginger with the cinnamon.

Maple syrup can be substituted with honey or agave syrup.

Try pears or berries instead of apples for a different flavor.

Store leftovers in the fridge for 3-4 days, or freeze individual portions for later use.
