Description

Oatmeal cream pies are a nostalgic treat made of soft, chewy oatmeal cookies sandwiched with a creamy, sweet filling. Perfect for any occasion, they offer a balance of flavors and textures, making them an irresistible snack or dessert.


Ingredients

1 1/2 cups rolled oats

3/4 cup all-purpose flour

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup unsalted butter, softened (for filling)

1 cup powdered sugar

1 tablespoon milk

1 teaspoon vanilla extract (for filling)


Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the rolled oats, flour, baking soda, cinnamon, and salt.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. The dough will be thick.
  6. Drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten them slightly with the back of a spoon.
  7. Bake for 8-10 minutes, or until the edges are lightly golden and the cookies have set. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  8. For the filling, beat together the softened butter, powdered sugar, milk, and vanilla extract in a medium bowl until smooth and creamy.
  9. Once the cookies have cooled, spread a generous amount of the cream filling on the flat side of one cookie, then sandwich it with another cookie.

Notes

To keep the oatmeal cookies chewy, avoid overbaking them. Remove the cookies from the oven once the edges are lightly golden.
