Description
Obatzda is a traditional Bavarian cheese spread made with Camembert, cream cheese, butter, onion, and spices, blended into a creamy, savory appetizer perfect for serving with pretzels or hearty bread.
Ingredients
8 oz Camembert cheese, softened
4 oz cream cheese, softened
3 tablespoons unsalted butter, softened
1 small onion, finely minced
1 teaspoon sweet paprika
1/2 teaspoon caraway seeds (optional)
1/4 teaspoon salt
1/4 teaspoon black pepper
1–2 tablespoons sparkling apple cider or apple juice (optional)
Fresh chives, finely chopped (for garnish)
Instructions
- If desired, remove the rind from the Camembert for a smoother texture and place the cheese in a medium mixing bowl.
- Add the softened cream cheese and butter. Blend with a fork or hand mixer until mostly smooth, leaving slight texture.
- Stir in the minced onion, paprika, caraway seeds (if using), salt, and black pepper.
- Mix in 1–2 tablespoons sparkling apple cider or apple juice if a subtle sweetness is desired. Adjust seasoning to taste.
- Transfer to a serving dish and refrigerate for at least 1 hour to allow flavors to develop.
- Before serving, let sit at room temperature for 15 minutes. Garnish with fresh chives and serve with pretzels or bread.
Notes
Leaving the Camembert rind on creates a more rustic and intense flavor.
Substitute smoked paprika for a smoky variation.
Add a splash of apple cider vinegar for a sharper taste.
Dijon mustard can be added for extra tang.
Store in an airtight container in the refrigerator for up to 3 days.
Do not freeze, as texture may become grainy after thawing.
