Description

A vibrant and savory pasta salad made with cheese-filled tortellini, briny olives, crisp vegetables, and zesty Italian dressing. Perfect as a side for picnics, BBQs, or a refreshing main dish.


Ingredients

1 (20 oz) package refrigerated cheese tortellini

1 cup cherry tomatoes, halved

1 cup cucumber, diced

3/4 cup black olives, sliced

1/2 cup green olives, sliced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/2 cup mozzarella pearls (optional)

1/2 cup Italian dressing (store-bought or homemade)

Salt and pepper to taste


Instructions

  1. Cook the tortellini according to the package directions. Drain and rinse under cold water to stop the cooking process.
  2. In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, black and green olives, red onion, parsley, and mozzarella pearls if using.
  3. Pour the Italian dressing over the mixture and toss gently to coat evenly.
  4. Season with salt and pepper to taste.
  5. Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

Use sun-dried tomatoes for a richer flavor variation.

Swap mozzarella pearls with crumbled feta for a tangier taste.

Add grilled chicken or chickpeas for extra protein.

Try balsamic vinaigrette or lemon-herb dressing for variety.
