Description

A hearty and comforting one-pot pasta dish featuring tender chicken, savory sausage, fresh spinach, and a rich cheesy sauce. Perfect for busy weeknights with minimal cleanup.


Ingredients

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

1 cup sausage, crumbled

1 onion, chopped

2 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

8 oz pasta (penne or rotini)

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Red pepper flakes (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  2. In the same pot, cook the crumbled sausage until browned, about 5-6 minutes. Set aside with the chicken.
  3. Add chopped onion to the pot and sauté until soft and translucent, about 3 minutes. Add garlic and cook for 30 seconds more.
  4. Pour in chicken broth and heavy cream. Stir and bring to a simmer.
  5. Add pasta and cook until tender according to package instructions, about 8-10 minutes.
  6. Stir in chopped spinach and cook until wilted, about 1-2 minutes.
  7. Return chicken and sausage to the pot. Add mozzarella and Parmesan cheese. Stir until cheese is melted and the mixture is creamy.
  8. Season with salt, pepper, and red pepper flakes if desired. Serve warm.

Use smoked or turkey sausage for a flavor variation.

Swap spinach with kale or arugula for different greens.

Try cheddar or fontina cheese for a unique twist.

Use whole wheat or gluten-free pasta if preferred.

For a lighter version, use half-and-half instead of heavy cream.
