Description
This One-Pot Chicken Parmesan Mac & Cheese combines the flavors of chicken parmesan and mac and cheese into a quick, creamy, and comforting meal. It’s easy to make and requires just one pot for minimal cleanup, making it perfect for a busy weeknight dinner.
Ingredients
2 tablespoons olive oil
2 boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper, to taste
3 cloves garlic, minced
2 cups uncooked elbow macaroni
3 cups chicken broth
1 cup milk (whole or 2%)
1 cup marinara sauce
1 ½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
1 teaspoon Italian seasoning
Fresh basil or parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet or pot over medium-high heat. Season the chicken pieces with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
 - In the same pot, add minced garlic and sauté for about 1 minute, or until fragrant.
 - Add the uncooked macaroni, chicken broth, milk, marinara sauce, and Italian seasoning to the pot. Stir well to combine.
 - Bring the mixture to a boil, then reduce the heat to medium-low and cover. Simmer for about 10-12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
 - Stir in the cooked chicken, mozzarella cheese, and Parmesan cheese until melted and creamy.
 - Remove from heat, garnish with fresh basil or parsley if desired, and serve warm.
 
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
To reheat, add a splash of milk or chicken broth to loosen the sauce, and warm on the stove or microwave.
For a spicier version, add red pepper flakes or hot sauce.
Feel free to add more veggies like spinach, mushrooms, or bell peppers to make it heartier.
