Description

This One-Pot Chicken Parmesan Mac & Cheese combines the flavors of chicken parmesan and mac and cheese into a quick, creamy, and comforting meal. It’s easy to make and requires just one pot for minimal cleanup, making it perfect for a busy weeknight dinner.


Ingredients

2 tablespoons olive oil

2 boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

3 cloves garlic, minced

2 cups uncooked elbow macaroni

3 cups chicken broth

1 cup milk (whole or 2%)

1 cup marinara sauce

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Fresh basil or parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet or pot over medium-high heat. Season the chicken pieces with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. In the same pot, add minced garlic and sauté for about 1 minute, or until fragrant.
  3. Add the uncooked macaroni, chicken broth, milk, marinara sauce, and Italian seasoning to the pot. Stir well to combine.
  4. Bring the mixture to a boil, then reduce the heat to medium-low and cover. Simmer for about 10-12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
  5. Stir in the cooked chicken, mozzarella cheese, and Parmesan cheese until melted and creamy.
  6. Remove from heat, garnish with fresh basil or parsley if desired, and serve warm.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days.

To reheat, add a splash of milk or chicken broth to loosen the sauce, and warm on the stove or microwave.

For a spicier version, add red pepper flakes or hot sauce.

Feel free to add more veggies like spinach, mushrooms, or bell peppers to make it heartier.
