Ingredients
1 lb ground beef
1 small onion, finely chopped
1 green bell pepper, diced
2 cloves garlic, minced
1 cup tomato sauce
1/2 cup ketchup
1 tablespoon tomato paste
1 tablespoon soy sauce
1 tablespoon brown sugar
1 teaspoon apple cider vinegar
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
1 box (8.5 oz) cornbread mix
1 egg
1/3 cup milk
Instructions
- Preheat the oven to 375°F (190°C).
- In a large oven-safe skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain excess grease if needed.
- Add the chopped onion, diced bell pepper, and minced garlic. Cook for 3 to 4 minutes until softened and fragrant.
- Stir in the tomato sauce, ketchup, tomato paste, soy sauce, brown sugar, apple cider vinegar, smoked paprika, salt, and black pepper. Simmer for 5 to 7 minutes until slightly thickened.
- Sprinkle shredded cheddar cheese evenly over the beef mixture.
- In a separate bowl, whisk together the cornbread mix, egg, and milk until just combined.
- Pour the cornbread batter evenly over the beef mixture and gently spread to cover.
- Bake for 18 to 22 minutes, or until the cornbread is golden and a toothpick inserted in the center comes out clean.
- Let cool slightly before serving warm directly from the skillet.
Notes
Substitute ground turkey or chicken for a lighter option.
Add diced jalapeños or cayenne pepper for extra heat.
Mix Monterey Jack with cheddar for added richness.
Stir in corn kernels for added sweetness and texture.
