Description

This Pancake Sausage Casserole layers fluffy homemade pancake batter with savory breakfast sausage, melted cheddar cheese, and maple syrup for a perfect sweet-and-savory breakfast bake. It is ideal for weekend mornings, holiday brunches, or feeding a crowd with ease.


Ingredients

1 pound breakfast sausage

2 cups all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

2 cups milk

2 large eggs

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

1 cup shredded cheddar cheese

1/2 cup maple syrup

Butter or cooking spray for greasing


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain excess grease and set aside.
  3. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  4. In a separate bowl, combine the milk, eggs, melted butter, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  6. Spread half of the batter evenly into the prepared baking dish.
  7. Sprinkle the cooked sausage over the batter, then top with shredded cheddar cheese.
  8. Pour the remaining batter over the sausage and cheese, smoothing the top gently. Drizzle the maple syrup evenly over the casserole.
  9. Bake for 30 to 35 minutes, until golden brown and a toothpick inserted in the center comes out clean.
  10. Let cool for 5 to 10 minutes before slicing and serving.

Notes

Swap cheddar for mozzarella or pepper jack for a different flavor.

Add sautéed bell peppers or green onions to the sausage layer for extra texture.

Use turkey sausage for a lighter option.
