Description

A light and flavorful dish featuring cod fillets topped with a crispy, golden Parmesan crust, baked to perfection for a quick and delicious meal.


Ingredients

4 cod fillets (about 1 lb)

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs

2 tablespoons melted butter

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon dried parsley

Salt and pepper to taste

Lemon wedges (for serving)


Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking sheet with cooking spray or a small amount of oil.
  2. In a shallow bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, dried parsley, salt, and pepper.
  3. Brush the cod fillets with melted butter and drizzle lemon juice over the top.
  4. Press each fillet into the Parmesan mixture, ensuring an even coating on all sides.
  5. Place the coated cod fillets on the prepared baking sheet and bake for 12-15 minutes, or until the fish flakes easily with a fork and the crust is golden brown.
  6. Serve the Parmesan baked cod with lemon wedges for extra flavor.

Notes

For a gluten-free option, substitute breadcrumbs with crushed gluten-free crackers or almond meal.

If preparing ahead, coat the cod fillets up to 1 day in advance and store them in the fridge until ready to bake.

For best reheating, use the oven at 350°F (175°C) for 5-10 minutes to keep the crust crispy.

Other white fish like haddock, tilapia, or flounder can be used as a substitute for cod.

Freeze leftovers for up to 2 months; thaw overnight and reheat as needed.
