Description

Parmesan Zucchini Fries are a healthier alternative to traditional fries, made with zucchini coated in Parmesan cheese and breadcrumbs, then baked to crispy perfection.


Ingredients

2 medium zucchinis

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (use gluten-free if needed)

1/2 teaspoon garlic powder

1/2 teaspoon dried oregano

1/4 teaspoon salt

1/4 teaspoon black pepper

1 egg, beaten

Olive oil spray


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the zucchinis into fries, about 1/2-inch thick.
  3. In a shallow bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and pepper.
  4. In another shallow bowl, beat the egg.
  5. Dip each zucchini fry into the egg, then coat it with the Parmesan breadcrumb mixture, pressing lightly to adhere.
  6. Place the coated fries on a baking sheet lined with parchment paper.
  7. Lightly spray the fries with olive oil to help them crisp up.
  8. Bake for 20-25 minutes, flipping halfway through, until the fries are golden and crispy.
  9. Serve immediately with your favorite dipping sauce.

Notes

Add red pepper flakes for a spicy kick.

Swap Parmesan with Romano, cheddar, or mozzarella for different flavors.

Use gluten-free breadcrumbs for a gluten-free version.

Fresh herbs like basil or thyme can be added to the breadcrumb mixture for extra flavor.

These fries are best served fresh, but can be stored in an airtight container for up to 2 days.
