Ingredients
4 large peaches, peeled and sliced
1 cup fresh raspberries
1/4 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cubed
1/2 cup whole milk
1 tablespoon milk (for brushing the top)
1 tablespoon coarse sugar (for sprinkling on top)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- In a large bowl, combine the sliced peaches, raspberries, 1/4 cup of sugar, cornstarch, and vanilla extract. Stir gently to coat the fruit evenly. Pour this fruit mixture into the prepared baking dish.
- In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
- Pour in the milk and stir until just combined. The dough will be thick.
- Spoon dollops of the biscuit dough evenly over the fruit mixture, covering as much of the fruit as possible.
- Brush the top of the biscuit dough with a tablespoon of milk and sprinkle with coarse sugar.
- Bake for 40-45 minutes, or until the fruit is bubbling and the topping is golden brown.
- Allow to cool slightly before serving, and enjoy warm with a scoop of vanilla ice cream or whipped cream if desired.
