Ingredients

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup chocolate chips (optional)

For the Peanut Butter Swirl:

1/4 cup peanut butter

1 tablespoon coconut oil or butter, melted

1 tablespoon maple syrup (or honey)


Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.
  2. In a large bowl, mix together melted peanut butter, coconut oil (or butter), sugar, almond milk, and vanilla extract until smooth.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until fully combined. If using, fold in chocolate chips.
  5. Pour the brownie batter into the prepared pan, spreading evenly.
  6. For the peanut butter swirl, combine peanut butter, coconut oil, and maple syrup in a small bowl until smooth.
  7. Drop spoonfuls of the peanut butter mixture onto the brownie batter and swirl with a knife or toothpick.
  8. Bake for 20-25 minutes or until a toothpick inserted comes out with a few moist crumbs.
