These Peanut Butter Chocolate Chip Cookie Bars are a delightful treat that combines the creamy goodness of peanut butter with rich chocolate chips and a soft, chewy cookie base. The gooey texture and sweet flavor make them irresistible!
Ingredients
¾ cup salted butter (170 g)
½ cup creamy peanut butter (128 g)
2 large eggs
1½ cups packed light brown sugar (318 g)
1 tablespoon vanilla extract
2 cups all-purpose flour (284 g)
1 teaspoon baking soda
1 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper.
 - Melt the butter and peanut butter together over medium heat in a saucepan, stirring until smooth. Remove from heat and let cool slightly.
 - Whisk in the eggs, brown sugar, and vanilla extract until well combined.
 - In a separate bowl, whisk together the flour and baking soda. Gradually add the dry ingredients to the wet mixture, stirring until fully combined.
 - Stir in the chocolate chips until evenly distributed throughout the dough.
 - Spread the batter evenly into the prepared baking pan and bake for 20-25 minutes. Check for doneness with a toothpick—if it comes out clean with a few moist crumbs, they’re ready.
 - Let the bars cool in the pan for at least 10 minutes before cutting them into squares.
 
Notes
For a nutty twist, you can add chopped peanuts or other nuts.
Try adding raisins or dried cranberries for a sweet-tart contrast.
Swap milk chocolate chips for dark or white chocolate chips for variety.
For extra peanut butter flavor, swirl in some additional peanut butter on top before baking.
