Description

Soft and chewy peanut butter cookie bars layered with a rich, creamy chocolate filling and topped with crumbled cookie dough for the ultimate sweet and indulgent treat.


Ingredients

1 cup unsalted butter, softened

1 cup creamy peanut butter

1 cup granulated sugar

1 cup packed brown sugar

2 large eggs

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups semi-sweet chocolate chips

1 can (14 ounces) sweetened condensed milk


Instructions

  1. Preheat oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
  2. Cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients and mix until a soft dough forms.
  5. Press two-thirds of the dough evenly into the prepared baking pan.
  6. In a microwave-safe bowl, combine chocolate chips and sweetened condensed milk. Heat in 30-second intervals, stirring between each, until smooth.
  7. Pour the chocolate mixture evenly over the cookie base.
  8. Crumble the remaining dough over the chocolate layer.
  9. Bake for 25–30 minutes, until the top is lightly golden brown.
  10. Allow to cool completely before slicing into 12 bars.

Notes

Use well-stirred natural peanut butter if substituting, though creamy peanut butter provides best texture.

Swap semi-sweet chips for dark chocolate for a richer flavor.

Add chopped peanuts or peanut butter chips for extra texture.

Sprinkle sea salt or drizzle melted chocolate on top after cooling for added flavor.

Store in an airtight container at room temperature for up to 4 days, refrigerate up to 1 week, or freeze up to 3 months.
