Description

These Peanut Butter Oatmeal Bars are a wholesome blend of creamy peanut butter and hearty oats, sweetened with maple syrup and perfect as a quick breakfast or snack. Naturally vegan and gluten-free, they offer a balanced mix of carbs and protein with optional chocolate indulgence.

Ingredients

1 1/2 cups old-fashioned rolled oats

1/2 cup peanut butter

1/4 cup maple syrup

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8x8-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, combine oats, peanut butter, maple syrup, applesauce, vanilla extract, cinnamon, and salt. Mix until well combined.
  3. Fold in the dark chocolate chips if using.
  4. Transfer the mixture to the prepared pan and press it down evenly with a spatula.
  5. Bake for 20-25 minutes, until edges are golden and a toothpick comes out clean.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Once cooled, cut into squares and enjoy.
