Description

These Peanut Butter Pretzel Bites are a perfect sweet and salty snack that combines creamy peanut butter filling with crunchy mini pretzels and a rich chocolate coating. They’re no-bake, easy to assemble, and ideal for sharing—or keeping all to myself.

Ingredients

1 cup creamy peanut butter (natural or regular)

2 tbsp unsalted butter, softened

1/2 cup powdered sugar

3/4 cup crushed graham cracker crumbs (optional)

1 tsp vanilla extract

Mini pretzels (about 50–60 pieces)

1 ½ cups semi-sweet or milk chocolate chips

1 tbsp coconut oil or shortening (optional)

Sea salt (optional, for topping)

Instructions

  1. In a bowl, mix the peanut butter, softened butter, powdered sugar, graham cracker crumbs (if using), and vanilla extract until smooth and thick. Chill in the fridge for 20 minutes.
  2. Scoop about 1 teaspoon of the mixture and roll into a ball. Sandwich each ball between two mini pretzels, pressing gently. Repeat until all mixture and pretzels are used. Freeze on a parchment-lined baking sheet for 15–20 minutes.
  3. Melt chocolate chips and coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  4. Dip each pretzel bite halfway into the melted chocolate and place back on the sheet. Sprinkle sea salt if desired.
  5. Refrigerate the bites until chocolate is firm, about 20–30 minutes.

Notes

For a creamier filling, skip the graham cracker crumbs.

Use dark or white chocolate for variation.

Use gluten-free pretzels for a gluten-free version.

Store in an airtight container in the fridge for up to a week or freeze for longer storage.
