Ingredients
12-15 fresh okra pods, ends trimmed
1 cup pepper jack cheese, shredded
1/2 cup all-purpose flour
1/2 cup cornmeal
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon black pepper
1 egg, beaten
1/2 cup buttermilk
Vegetable oil, for frying
Instructions
- Slice the okra pods lengthwise and scoop out the seeds using a spoon. Stuff each okra pod with shredded pepper jack cheese.
- In a shallow bowl, combine the flour, cornmeal, garlic powder, paprika, cayenne pepper, salt, and black pepper.
- In another bowl, whisk together the beaten egg and buttermilk.
- Heat the vegetable oil in a deep frying pan or skillet over medium-high heat.
- Dip each stuffed okra pod into the egg mixture, then dredge it in the flour-cornmeal mixture, ensuring an even coating.
- Carefully place the coated okra in the hot oil and fry for 3-4 minutes, or until golden brown and crispy.
- Once fried, remove the okra from the oil and let it drain on paper towels. Serve hot with your favorite dipping sauce.
Notes
For a crunchier coating, use panko breadcrumbs in addition to the flour and cornmeal mixture.
To make the recipe vegan, swap the egg and buttermilk for a non-dairy option like almond milk and a flax egg.
If using frozen okra, thaw and pat dry before stuffing and frying.
