Description

This pistachio fudge is a delightful treat with a perfect balance of creamy sweetness and nutty crunch. Made with white chocolate and roasted pistachios, it's a simple yet indulgent snack that will leave you craving more.


Ingredients

1 cup unsalted pistachios, shelled

1 can (14 oz) sweetened condensed milk

2 cups white chocolate chips

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional: extra chopped pistachios for topping


Instructions

  1. Line an 8x8-inch baking dish with parchment paper.
  2. In a medium saucepan, combine the sweetened condensed milk and white chocolate chips over low heat, stirring continuously until smooth.
  3. Remove from heat and stir in the vanilla extract and salt.
  4. Fold in the shelled pistachios, making sure they are evenly distributed.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Optional: Sprinkle extra chopped pistachios on top for texture and decoration.
  7. Refrigerate the fudge for at least 3 hours or until set.
  8. Once set, remove the fudge from the dish and cut it into squares.

Notes

Fudge can be stored in an airtight container in the refrigerator for up to 2 weeks.

If using salted pistachios, reduce the added salt in the recipe.

Feel free to swap out the white chocolate for milk or dark chocolate if preferred.

Other nuts like almonds or walnuts can be substituted for pistachios.

For a festive twist, consider adding dried fruit like cranberries or apricots.
