Description

Pizza Eggs is a quick, protein-packed breakfast that combines fluffy eggs with classic pizza flavors like mozzarella, pepperoni, and savory sauce in one skillet.


Ingredients

3 large eggs

1 tablespoon butter or olive oil

2 tablespoons pizza sauce

1/4 cup shredded mozzarella cheese

2 tablespoons sliced mushrooms

2 tablespoons diced bell pepper

2 tablespoons chopped onion

4 slices pepperoni

1/4 teaspoon dried oregano

1/4 teaspoon chili flakes (optional)

Salt to taste

Black pepper to taste


Instructions

  1. Heat butter or olive oil in a non-stick skillet over medium heat.
  2. Add mushrooms, bell pepper, and onion, and sauté for 2 to 3 minutes until softened.
  3. Stir in pizza sauce and oregano, cooking for about 1 minute to combine flavors.
  4. In a bowl, whisk eggs with salt and black pepper until well mixed.
  5. Pour the eggs into the skillet and cook undisturbed for 1 to 2 minutes until the bottom begins to set.
  6. Gently lift the edges and tilt the pan to allow uncooked egg to flow underneath.
  7. When eggs are almost set, sprinkle mozzarella cheese on top and add pepperoni slices.
  8. Cover the skillet and cook for another 1 to 2 minutes until cheese melts and eggs are fully cooked.
  9. Slide onto a plate, slice if desired, and serve immediately.

Notes

Swap pepperoni with cooked chicken, turkey, or olives for variation.

For a vegetarian version, omit meat and add extra vegetables like spinach or zucchini.
