Description

These Pumpkin Pie Bars are a delightful twist on a classic fall favorite. They feature a rich, creamy pumpkin filling spiced just right, all resting on a buttery, crumbly crust.


Ingredients

1 1/2 cups all-purpose flour

1/4 cup granulated sugar

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1 egg

1/2 teaspoon vanilla extract

1 can (15 oz) pumpkin puree

1/2 cup granulated sugar

2 large eggs

1/2 teaspoon cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon ground cloves

1/2 teaspoon salt

1/2 cup heavy cream


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan and line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, sugar, cinnamon, and salt. Add the cold cubed butter and use a pastry cutter or fork to cut it into the flour mixture until it resembles coarse crumbs.
  3. Add the egg and vanilla extract to the flour mixture and stir until the dough comes together. Press the dough into the bottom of the prepared baking pan to form an even crust.
  4. Bake the crust for 10-12 minutes or until it’s lightly golden. Remove from the oven and set aside to cool slightly.
  5. In a separate bowl, whisk together the pumpkin puree, sugar, eggs, cinnamon, nutmeg, ginger, cloves, salt, and heavy cream until smooth and well combined.
  6. Pour the pumpkin filling over the partially baked crust and spread it evenly.
  7. Bake for 30-35 minutes, or until the filling is set and a toothpick inserted into the center comes out clean.
  8. Allow the bars to cool completely in the pan, then refrigerate for at least 2 hours before slicing into squares.

Notes

You can make these bars ahead of time. Refrigerate them for a day or two before serving.

Feel free to substitute the buttery crust with a graham cracker crust for a different texture and flavor.

If you don’t have all the spices, you can use pumpkin pie spice instead, adjusting the quantity to taste.

These bars can be frozen for 2-3 months. Wrap them tightly before storing them in an airtight container.
