Description

A sweet and crunchy fall-inspired twist on the classic Chex Mix, this Pumpkin Spice Snack Mix combines cereals, nuts, pretzels, and seeds in a warm maple-pumpkin glaze, perfect for cozy snacking or festive gatherings.


Ingredients

3 cups Rice Chex cereal

3 cups Corn Chex cereal

2 cups mini pretzels

1 cup pecan halves (or walnuts)

1/2 cup pepitas (pumpkin seeds)

1/2 cup maple syrup or honey

1/4 cup coconut oil or butter

1/2 cup brown sugar or coconut sugar

2 teaspoons pumpkin pie spice

1 teaspoon cinnamon

1/2 teaspoon salt

1 teaspoon vanilla extract

1/2 cup dried cranberries (optional)

1/2 cup white chocolate chips or yogurt chips (optional, add after baking)


Instructions

  1. Preheat oven to 300°F (150°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the Rice Chex, Corn Chex, mini pretzels, pecans, and pepitas.
  3. In a small saucepan over medium heat, stir together maple syrup, coconut oil, brown sugar, pumpkin pie spice, cinnamon, and salt. Simmer and stir until the sugar is fully dissolved.
  4. Remove from heat and stir in the vanilla extract.
  5. Pour the syrup over the cereal mixture and toss gently until evenly coated.
  6. Spread the mixture evenly on the prepared baking sheet.
  7. Bake for 35 to 40 minutes, stirring every 15 minutes for even toasting.
  8. Remove from oven and allow to cool completely.
  9. Once cooled, stir in dried cranberries and white chocolate chips, if using.
  10. Store in an airtight container at room temperature.

Notes

Use gluten-free pretzels and cereals to make this recipe gluten-free.

Swap pecans with almonds, cashews, or sunflower seeds for variation.

Add candy-coated chocolates or caramel bits for a kid-friendly version.

Re-crisp by baking at 300°F for 5 minutes if it loses crunch.
