Ingredients

For the Stir-Fry:

2 chicken breasts, thinly sliced

1 tbsp cornstarch (for extra tenderness)

1 tbsp soy sauce

1 tbsp oil (sesame or vegetable)

1 cup broccoli florets

1 red bell pepper, sliced

1 carrot, julienned

½ onion, sliced

2 cloves garlic, minced

1 tsp ginger, grated

For the Stir-Fry Sauce:

¼ cup soy sauce

1 tbsp honey or brown sugar

1 tbsp rice vinegar

1 tsp sesame oil

½ tsp red pepper flakes (optional, for spice)

1 tsp cornstarch mixed with 2 tbsp water (for thickening)

Instructions

  1. Marinate the Chicken: Toss sliced chicken with 1 tbsp soy sauce and cornstarch. Let sit for 10 minutes to marinate.
  2. Cook the Chicken: Heat 1 tbsp oil in a pan over medium-high heat. Add chicken and cook for 4-5 minutes until golden brown and cooked through. Remove from the pan and set aside.
  3. Stir-Fry the Veggies: In the same pan, add minced garlic and grated ginger. Sauté for 30 seconds until fragrant. Add onion, bell pepper, broccoli, and carrot. Stir-fry for 3-4 minutes until the veggies are crisp-tender.
  4. Make the Sauce & Combine: Stir in the cooked chicken and pour in the stir-fry sauce. Cook for 1-2 minutes until the sauce thickens.
  5. Serve & Enjoy: Serve the stir-fry over steamed rice, noodles, or cauliflower rice. Enjoy the savory goodness!

Notes

Add extra crunch: Toss in cashews or peanuts for texture.

Change the protein: Swap chicken for shrimp, beef, or tofu.

Spice it up: Add more chili flakes or Sriracha to increase heat.
