Description

These Raspberry Cream Cheese Bites are a delightful treat that combines the tangy flavor of cream cheese with sweet raspberries and crispy puff pastry. Perfect for any occasion, they are easy to prepare and sure to impress.


Ingredients

1 sheet puff pastry, thawed

4 oz cream cheese, softened

1/4 cup powdered sugar

1/2 teaspoon vanilla extract

1/2 cup fresh raspberries

1 tablespoon honey (optional)

1 tablespoon fresh mint, chopped (optional)


Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Unroll the puff pastry sheet and cut it into 9 equal squares.
  3. In a small bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and well combined.
  4. Place a spoonful of the cream cheese mixture in the center of each puff pastry square.
  5. Top with a few fresh raspberries on top of the cream cheese.
  6. Carefully fold the corners of the puff pastry towards the center, creating a little pocket with the center exposed.
  7. Brush the edges of the pastry with a little water or egg wash for a golden finish.
  8. Bake for 15-20 minutes, or until the puff pastry is golden and crispy.
  9. Remove from the oven and let cool slightly.
  10. Optional: Drizzle with honey and sprinkle with chopped fresh mint before serving.

Notes

These bites can be made ahead by assembling and refrigerating them until ready to bake.

If freezing, freeze the assembled bites on a baking sheet, then transfer them to a sealed container. Bake directly from frozen, adding extra time.

You can swap raspberries for other fresh fruits like strawberries, blueberries, or blackberries.

For a savory version, skip the sugar and vanilla and add garlic or herbs to the cream cheese filling.
