Description

Creamy, nutty, and sweet, Ricotta Pistachio Honey Bites are an easy no-bake treat combining smooth ricotta, crunchy pistachios, and golden honey. Perfect as a dessert, elegant appetizer, or satisfying snack.


Ingredients

1 cup fresh ricotta cheese

½ cup finely chopped pistachios

¼ cup honey (plus extra for drizzling)

1 teaspoon vanilla extract

Pinch of salt

Optional toppings: extra chopped pistachios, edible flowers, or a light dusting of cocoa powder


Instructions

  1. In a bowl, mix ricotta, honey, vanilla extract, and a pinch of salt until smooth and creamy.
  2. Taste the mixture and adjust sweetness if needed.
  3. Using a small cookie scoop or your hands, form small bite-sized balls.
  4. Roll each ball in chopped pistachios until fully coated.
  5. Place the coated bites on a parchment-lined tray and refrigerate for at least 15 minutes to firm up.
  6. Before serving, drizzle with a bit more honey and add any optional toppings.

Notes

Chill the mixture before shaping if it feels too soft.

Best served chilled or at room temperature.
