Ingredients
1 pound baby carrots
1 tablespoon olive oil
1 tablespoon melted butter
2 tablespoons honey
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
Optional: chopped fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, whisk together olive oil, melted butter, honey, salt, pepper, and garlic powder.
- Add the baby carrots and toss until they are fully coated in the glaze.
- Spread the carrots in a single layer on a parchment-lined baking sheet.
- Roast for 25–30 minutes, stirring halfway through, until fork-tender and slightly caramelized.
- Remove from oven and sprinkle with chopped parsley before serving warm.

Use maple syrup instead of honey for a richer sweetness.
