Description

This creamy rotisserie chicken salad is a quick and flavorful meal, perfect for lunch or a light dinner. Made with shredded rotisserie chicken, crunchy celery, and a tangy dressing, it's both satisfying and refreshing. Serve it on its own, in a sandwich, or over greens for a delicious, protein-packed dish.


Ingredients

3 cups rotisserie chicken, shredded

1/2 cup mayonnaise

1/4 cup Greek yogurt

1 tablespoon Dijon mustard

1 teaspoon lemon juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup celery, finely chopped

1/4 cup red onion, finely diced

1/4 cup sliced almonds (optional)

1/4 cup dried cranberries (optional)

1 tablespoon fresh parsley, chopped


Instructions

  1. In a large mixing bowl, combine mayonnaise, Greek yogurt, Dijon mustard, lemon juice, garlic powder, onion powder, salt, and black pepper. Mix well to create a creamy dressing.
  2. Add shredded rotisserie chicken, chopped celery, diced red onion, sliced almonds, and dried cranberries.
  3. Stir until all ingredients are well coated with the dressing.
  4. Sprinkle fresh parsley over the top and mix again.
  5. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled on its own, in a sandwich, or over a bed of lettuce.

Notes

For added sweetness: Increase dried cranberries or drizzle honey.

For a nut-free version: Skip almonds or substitute with sunflower seeds.

For extra crunch: Add chopped apples or grapes.

For a spicy kick: Mix in a pinch of cayenne or a dash of hot sauce.

For lower fat: Use all Greek yogurt instead of mayonnaise.
