Description

A rich, gooey dessert with deep maple flavor and a hint of sea salt, Salted Maple Pie features a smooth custard filling in a flaky homemade crust. Perfect for fall and holiday gatherings.


Ingredients

1½ cups all-purpose flour

1 tablespoon sugar

½ teaspoon salt

½ cup (1 stick) cold unsalted butter, cut into small cubes

3 to 5 tablespoons ice water

1 cup pure maple syrup (preferably Grade A dark)

½ cup packed light brown sugar

¼ cup unsalted butter, melted and slightly cooled

3 large eggs

¼ cup heavy cream

2 tablespoons fine cornmeal

1 teaspoon pure vanilla extract

½ teaspoon flaky sea salt (plus more for topping)


Instructions

  1. In a mixing bowl, combine flour, sugar, and salt. Cut in cold butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form into a disk, wrap in plastic wrap, and chill for at least 1 hour.
  3. Preheat the oven to 350°F (175°C).
  4. Roll out the chilled dough on a lightly floured surface and fit into a 9-inch pie plate. Trim and crimp edges, then freeze the crust while preparing the filling.
  5. In a bowl, whisk together maple syrup, brown sugar, melted butter, eggs, heavy cream, cornmeal, vanilla, and sea salt until smooth.
  6. Pour the filling into the prepared pie crust.
  7. Bake for 45 to 55 minutes, or until the center is just set and slightly puffed, and the crust is golden brown.
  8. Allow the pie to cool completely before slicing. Sprinkle with additional flaky sea salt before serving.

Notes

Swap heavy cream with crème fraîche or sour cream for a tangy twist.

Add chopped pecans for a nutty variation.

Use a gluten-free flour blend for a gluten-free version.

Add a pinch of cinnamon or nutmeg for a warm spice flavor.

Store in the refrigerator for up to 4 days.

Reheat slices in a 300°F oven for 10 minutes or microwave for 20–30 seconds.
