A simple yet delicious dish combining tender chicken breasts, fresh spinach, and a hint of lemon, all cooked in one skillet for easy cleanup and maximum flavor.
Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
2 cloves garlic, minced
4 cups fresh spinach, chopped
1/2 teaspoon lemon zest
1 tablespoon fresh lemon juice
Salt and pepper to taste
1/4 teaspoon red pepper flakes (optional)
1/2 cup chicken broth (or water)
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Season both sides of the chicken breasts with salt, pepper, and red pepper flakes (if using).
- Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes per side until golden brown and cooked through (internal temperature of 165°F or 74°C). Remove chicken from the skillet and set aside.
- Add the minced garlic to the same skillet and sauté for 1 minute until fragrant.
- Add the chopped spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until it wilts down.
- Pour in the chicken broth (or water) and stir in the lemon zest and lemon juice. Let it simmer for 1-2 minutes to combine the flavors.
- Return the chicken breasts to the skillet and spoon some of the spinach mixture over the top. Cook for another 2-3 minutes to heat the chicken through.
- Garnish with fresh parsley and serve immediately.
Notes
For a creamy twist, sprinkle grated Parmesan cheese over the spinach and chicken while it simmers.
For a leaner alternative, use turkey breasts instead of chicken.
If fresh spinach is unavailable, substitute with thawed and drained frozen spinach.
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on low heat or in the microwave in 30-second intervals.
