Ingredients
12 large scallops
8 oz spaghetti or your favorite pasta
2 tablespoons olive oil
3 cloves garlic, minced
1/4 cup white wine (dry, such as Sauvignon Blanc or Pinot Grigio)
2 tablespoons unsalted butter
Salt and pepper, to taste
1/4 teaspoon red pepper flakes (optional)
2 tablespoons fresh parsley, chopped
1/4 cup grated Parmesan cheese
Instructions

Bring a pot of salted water to a boil and cook pasta according to package instructions. Reserve a little pasta water before draining.

While pasta cooks, pat scallops dry with paper towels and season with salt and pepper.
