Ingredients
1 lb large shrimp, peeled and deveined
8 oz linguine or spaghetti
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 cup dry white wine (or low-sodium chicken broth)
1 tablespoon fresh lemon juice
1/4 teaspoon crushed red pepper flakes (optional)
Salt and black pepper to taste
2 tablespoons chopped fresh parsley
Freshly grated Parmesan cheese (optional)
For the Garlic Bread:
1 small baguette or Italian loaf, halved lengthwise
3 tablespoons unsalted butter, softened
2 cloves garlic, minced
1 tablespoon chopped fresh parsley
Pinch of salt
Instructions
- Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente. Drain and set aside.
- Preheat oven to 375°F (190°C). In a small bowl, mix softened butter, minced garlic, parsley, and a pinch of salt. Spread on halved baguette and bake for 10–12 minutes until golden and crisp.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Sauté minced garlic for about 30 seconds until fragrant.
- Add shrimp to the skillet, season with salt, pepper, and red pepper flakes (if using). Cook 1–2 minutes per side until pink and opaque.
- Pour in white wine and lemon juice. Simmer for 2–3 minutes to reduce slightly.
- Stir in remaining 2 tablespoons of butter, add cooked pasta, and toss to coat evenly.
- Sprinkle with fresh parsley and Parmesan cheese if desired. Serve in bowls with slices of garlic bread.
Notes
Swap wine with low-sodium chicken broth and extra lemon juice for a non-alcoholic version.
Use gluten-free pasta and bread for a gluten-free variation.
Add veggies like spinach or cherry tomatoes for extra nutrition.
For a creamy twist, add a splash of heavy cream with the wine.
Leftovers keep in the fridge for up to 2 days; reheat pasta gently with a splash of broth.
