Description
These Skillet Banana Fritters are the perfect balance of sweetness and crunch, featuring ripe bananas with a crispy golden exterior.
Ingredients
2 ripe bananas, mashed
1 cup all-purpose flour
2 tablespoons sugar
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup milk
1 egg
1 teaspoon vanilla extract
2 tablespoons butter, melted
Vegetable oil for frying
Instructions
- In a medium bowl, mash the ripe bananas until smooth.
- In a separate bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- Add the mashed bananas, milk, egg, vanilla extract, and melted butter to the dry ingredients, mixing until just combined. The batter should be thick but pourable.
- Heat about 1 tablespoon of vegetable oil in a large skillet over medium heat.
- Drop spoonfuls of the batter into the skillet, gently flattening them to form small fritters.
- Cook for 2-3 minutes per side, or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
- Serve warm, dusted with powdered sugar or drizzled with honey or maple syrup.
Notes
To make these fritters vegan, substitute the egg with a flax egg and use a plant-based milk like almond or oat milk.
If using frozen bananas, ensure they are thawed and excess moisture is drained before mashing.
To make gluten-free, use a gluten-free flour blend that mimics the texture of all-purpose flour.
If you have leftovers, store them in an airtight container for up to 2 days and reheat in a skillet or toaster oven.
For added crunch, consider mixing in chopped nuts like walnuts or pecans.
