Description

These Skillet Banana Fritters are the perfect balance of sweetness and crunch, featuring ripe bananas with a crispy golden exterior.


Ingredients

2 ripe bananas, mashed

1 cup all-purpose flour

2 tablespoons sugar

1/2 teaspoon baking powder

1/4 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup milk

1 egg

1 teaspoon vanilla extract

2 tablespoons butter, melted

Vegetable oil for frying


Instructions

  1. In a medium bowl, mash the ripe bananas until smooth.
  2. In a separate bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. Add the mashed bananas, milk, egg, vanilla extract, and melted butter to the dry ingredients, mixing until just combined. The batter should be thick but pourable.
  4. Heat about 1 tablespoon of vegetable oil in a large skillet over medium heat.
  5. Drop spoonfuls of the batter into the skillet, gently flattening them to form small fritters.
  6. Cook for 2-3 minutes per side, or until golden brown and crispy.
