Description

This Slow Cooker Garlic Parmesan Chicken and Potatoes is a comforting, flavorful dish that’s easy to prepare and incredibly satisfying. The chicken thighs are tender, the potatoes crispy, and the garlic Parmesan sauce ties everything together perfectly.


Ingredients

4 bone-in, skinless chicken thighs

1.5 pounds baby potatoes, halved

1 tablespoon olive oil

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/4 cup heavy cream

1/4 cup chicken broth

1 teaspoon dried Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a pan over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.
  2. In a small bowl, mix together the grated Parmesan cheese, heavy cream, chicken broth, dried Italian seasoning, salt, and pepper. Set this mixture aside.
  3. Place the halved baby potatoes in the bottom of the slow cooker. Arrange the chicken thighs on top of the potatoes.
  4. Pour the garlic Parmesan sauce over the chicken and potatoes, ensuring everything is evenly coated.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is fully cooked through and the potatoes are tender.
  6. Once done, garnish with freshly chopped parsley before serving.

Notes

For crispier potatoes, brown them in a pan with a bit of olive oil before adding them to the slow cooker or crisp them under the broiler at the end of cooking.

Boneless chicken thighs can be used, but they cook faster than bone-in ones, so adjust the cooking time accordingly.

Feel free to add vegetables like carrots, onions, or bell peppers for a more hearty meal.

For a dairy-free version, substitute heavy cream with coconut milk and use dairy-free Parmesan.

If you want to make it spicier, add red pepper flakes or chopped fresh chilies to the sauce mixture.
