Description

A tender, flavorful dish with beef and broccoli coated in a savory, sweet teriyaki sauce. Perfect for a busy weeknight, this one-pot meal is easy to make and always satisfying.


Ingredients

1 ½ pounds beef (such as flank steak or sirloin), thinly sliced

3 cups broccoli florets

½ cup soy sauce (or tamari for gluten-free)

¼ cup brown sugar

2 tablespoons rice vinegar

2 tablespoons sesame oil

3 cloves garlic, minced

1 tablespoon freshly grated ginger

1 teaspoon cornstarch (optional, for thickening)

2 tablespoons water

Sesame seeds for garnish (optional)

Green onions, sliced, for garnish (optional)


Instructions

  1. Place the sliced beef in the bottom of the slow cooker.
  2. In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger until well combined.
  3. Pour the sauce mixture over the beef in the slow cooker.
  4. Cover the slow cooker and cook the beef on low for 4-5 hours, or until the beef is tender and fully cooked.
  5. About 30 minutes before serving, add the broccoli florets to the slow cooker, stirring them into the beef mixture. Cover and cook until the broccoli is tender.
  6. If you prefer a thicker sauce, mix the cornstarch with water in a small bowl and stir it into the slow cooker. Let it cook for an additional 10-15 minutes to thicken.
  7. Serve the beef and broccoli over rice or noodles and garnish with sesame seeds and sliced green onions, if desired.

Notes

For a gluten-free version, use tamari instead of soy sauce.

Vegetarian? Replace the beef with tofu or tempeh.

If you like a thicker sauce, you can add more cornstarch or cook the sauce longer before adding the broccoli.

For a spicy twist, add red pepper flakes or sriracha.

Store leftovers in an airtight container for up to 3-4 days.

This dish freezes well if you want to save it for later.
