Description

This spinach and cheese casserole is the ultimate comfort food, combining rich and creamy cheeses with the nutritional goodness of spinach. Ingredients

4 cups fresh spinach, chopped

1/2 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 large eggs

1/2 cup heavy cream

1/2 teaspoon garlic powder

1/4 teaspoon nutmeg

Salt and pepper to taste

1 tablespoon olive oil


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat the olive oil in a skillet over medium heat. Add the chopped spinach and sauté for 2-3 minutes until it's wilted.
  3. In a large bowl, whisk together the eggs, ricotta cheese, heavy cream, garlic powder, nutmeg, salt, and pepper.
  4. Stir in the shredded mozzarella and grated Parmesan cheeses. Once well combined, fold in the sautéed spinach mixture.
  5. Transfer the mixture into a greased casserole dish and smooth the top with a spatula.
