A hearty and comforting Stove‑Top Stuffing Meatloaf made with seasoned stuffing mix, ground beef, and a tangy ketchup-barbecue glaze. Easy to make and perfect for family dinners.
Ingredients
1 (6-ounce) box stuffing mix (turkey-flavored preferred)
1 cup hot beef broth
½ cup ketchup
¼ cup barbecue sauce (or preferred sauce)
2 large eggs, lightly beaten
2 pounds ground beef (85/15 blend)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×5‑inch loaf pan with heavy-duty foil, letting the edges hang over. Spray with non-stick spray.
- In a large mixing bowl, combine stuffing mix with hot beef broth until fully moistened.
- In a small bowl, mix ketchup and barbecue sauce. Stir 2 tablespoons of the mixture into the stuffing mixture, reserving the rest for topping.
- Add the beaten eggs and mix until combined.
- Gently fold in the ground beef using your hands, mixing just until combined. Avoid overmixing.
- Press the mixture into the prepared loaf pan and smooth the top.
- Spoon the remaining ketchup-barbecue mixture over the top and spread evenly.
- Bake for 1 hour 15 minutes to 1 hour 25 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 5–10 minutes. Lift it out using the foil, slice, and serve.
