Ingredients
1 cup graham cracker crumbs
2 tablespoons butter, melted
2 tablespoons sugar
8 oz cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy cream
1/2 cup fresh strawberries, chopped
1 tablespoon honey (optional)
Instructions
- In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir the mixture until it resembles wet sand.
 - Press the mixture into the bottom of serving cups or a small tart pan to form the crust and set it aside.
 - In a separate bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract and continue beating until well combined.
 - In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
 - Spoon the cheesecake mixture over the graham cracker crusts, smoothing the top with a spatula.
 - Top the treats with chopped fresh strawberries and drizzle a little honey on top for added sweetness.
 - Refrigerate the treats for at least 2 hours, or until set. Once chilled, they’re ready to serve!
 
Notes
You can swap strawberries for other fruits like blueberries or raspberries for a different flavor.
If you prefer a citrusy twist, you can add lemon zest to the cream cheese mixture.
For a richer treat, drizzle chocolate sauce on top or add chocolate shavings to the strawberries.
For a healthier version, substitute honey with agave or maple syrup and use reduced-fat cream cheese.
