Description

This Strawberry Cream Cheese Pie is a no-bake dessert featuring a creamy cream cheese filling, a crunchy graham cracker crust, and a topping of sweetened fresh strawberries. It's simple to make, refreshing, and perfect for any occasion.


Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup melted butter

2 tablespoons sugar

8 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 1/2 cups heavy whipping cream

1 pint fresh strawberries, hulled and sliced

2 tablespoons sugar (for strawberries)


Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Stir until the crumbs are evenly coated. Press this mixture into the bottom of a 9-inch pie dish to form a solid crust. Refrigerate while you prepare the filling.
  2. In a separate bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  3. In a chilled mixing bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
  4. Spread the cream cheese filling evenly over the graham cracker crust and smooth the top.
  5. In a small bowl, toss the sliced strawberries with 2 tablespoons of sugar. Let them sit for about 10 minutes to release their juices.
  6. Arrange the sugared strawberries evenly on top of the cream cheese filling.
  7. Refrigerate the pie for at least 4 hours, or until set. Slice and serve chilled.

Notes

This pie can be made ahead of time and stored in the refrigerator for up to 3 days.

For a gluten-free version, use gluten-free graham cracker crumbs for the crust.

Feel free to experiment with different fruits like raspberries or blueberries for variety.

Frozen strawberries can be used as a substitute for fresh strawberries, just make sure to thaw and drain excess liquid before adding them to the pie.
