Description

A no-bake, fruity twist on classic tiramisu featuring juicy macerated strawberries, coffee-dipped ladyfingers, and a light mascarpone whipped cream. Perfect for spring and summer gatherings.


Ingredients

1 pound (about 450 g) fresh strawberries, hulled and sliced

1/4 cup granulated sugar (for strawberries)

1 cup strong brewed coffee or decaf, cooled

2 tablespoons sugar (for coffee mixture)

1 teaspoon vanilla extract

8 ounces (about 225 g) mascarpone cheese, softened

1 cup heavy whipping cream

1/3 cup powdered sugar

1 teaspoon vanilla extract (for cream)

2430 ladyfinger cookies

Zest of one lemon (optional)

Cocoa powder, for dusting


Instructions

  1. Toss the sliced strawberries with granulated sugar and let them sit for 15–20 minutes to macerate.
  2. In a small bowl, mix cooled coffee with 2 tablespoons sugar and 1 teaspoon vanilla extract.
  3. In a mixing bowl, beat the mascarpone cheese until smooth and creamy.
  4. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  5. Gently fold the whipped cream into the mascarpone until fully combined and smooth.
  6. Briefly dip each ladyfinger into the coffee mixture and line the bottom of a serving dish.
  7. Spread half of the mascarpone mixture over the ladyfingers.
  8. Top with half of the macerated strawberries and their juices.
  9. Repeat the layering with the remaining ladyfingers, mascarpone cream, and strawberries.
  10. Sprinkle lemon zest on top (if using), and dust lightly with cocoa powder.
  11. Cover and chill the dessert for at least 4 hours, or overnight for best results.

Notes

Add a splash of amaretto or coffee liqueur to the coffee for a boozy version.

Mix in raspberries or blueberries for a berry blend.

Shave dark chocolate between layers or on top for extra indulgence.

Use gluten-free ladyfingers for a gluten-free version.

Add lemon juice to the mascarpone mixture for extra citrus flavor.
