Description

A comforting and hearty soup inspired by classic stuffed peppers, combining ground beef, rice, and sweet bell peppers in a savory tomato broth, perfect for chilly days.


Ingredients

1 lb ground beef (or ground turkey)

1 small onion, diced

3 bell peppers (red, green, or yellow), diced

3 cloves garlic, minced

1 can (15 oz) diced tomatoes

1 can (15 oz) tomato sauce

4 cups beef broth (or vegetable broth)

1 cup cooked rice

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1 tablespoon olive oil


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and garlic, sauté until fragrant and translucent, about 3-4 minutes.
  3. Add ground beef, break apart with a spoon, cook until browned. Drain excess fat if needed.
  4. Stir in diced bell peppers and cook for about 5 minutes until slightly softened.
  5. Add diced tomatoes, tomato sauce, beef broth, oregano, basil, salt, and pepper; stir well and bring to a boil.
  6. Reduce heat to low and simmer uncovered for 20 minutes to meld flavors.
  7. Stir in cooked rice and simmer for another 5 minutes until heated through.
  8. Taste and adjust seasoning as needed before serving.

Notes

Can substitute ground beef with ground turkey or plant-based meat for a lighter or vegetarian option.

Add crushed red pepper flakes for a spicy kick.

Optional additions include corn or beans for extra texture.

Quinoa can be used instead of rice for a different twist.

Store leftovers in airtight containers in the fridge for up to 4 days or freeze for longer storage.

Reheat gently on stove or microwave, stirring occasionally.

Slow cooker option: brown beef and sauté onions first, then cook all ingredients except rice on low for 6-8 hours or high for 3-4 hours; stir in cooked rice before serving.
