Ingredients
1 medium sweet potato (about 1 cup cooked and mashed)
1 medium zucchini, grated and excess water squeezed out
1/4 cup almond flour (or breadcrumbs)
1 tablespoon nutritional yeast (optional, for cheesy flavor)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Olive oil spray for baking
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Peel and cube the sweet potato, then boil or steam it for 10–12 minutes until fork-tender. Mash and let cool slightly.
- Grate the zucchini and squeeze out as much moisture as possible using a clean kitchen towel or cheesecloth.
- In a large bowl, combine mashed sweet potato, grated zucchini, almond flour, nutritional yeast, garlic powder, onion powder, salt, and pepper.
- Mix until the mixture holds together like dough.
- Shape the mixture into small tot-sized cylinders and place on the prepared baking sheet.
- Lightly spray the tots with olive oil.
- Bake for 20–25 minutes, flipping halfway through, until golden and crispy on the outside.
- Serve warm with your favorite dipping sauce.
