Description

A hearty and comforting breakfast casserole made with crispy tater tots, savory sausage, fluffy seasoned eggs, and plenty of melted cheddar and mozzarella cheese. Perfect for weekends, holidays, or make-ahead mornings.


Ingredients

1 (32 oz) bag frozen tater tots

1 pound breakfast sausage

8 large eggs

1 cup milk

2 cups shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/2 cup bell pepper, diced

1/4 cup green onions, sliced

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper to taste

Nonstick cooking spray


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with nonstick cooking spray.
  2. Arrange the frozen tater tots in an even layer across the bottom of the prepared baking dish.
  3. In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it apart as it cooks. Drain excess grease and sprinkle the sausage evenly over the tater tots.
  4. In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and black pepper until smooth. Stir in the diced bell pepper and half of the shredded cheddar cheese.
  5. Pour the egg mixture evenly over the tater tots and sausage. Sprinkle the remaining cheddar cheese and mozzarella cheese over the top.
  6. Bake for 35–45 minutes, until the eggs are set in the center and the top is golden brown.
  7. Remove from the oven and let cool for 5–10 minutes. Garnish with sliced green onions, slice, and serve warm.

Notes

Assemble the casserole the night before, cover, and refrigerate. Add a few extra minutes to baking time if chilled.

Swap sausage with cooked bacon or diced ham for variation.

Add jalapeños or red pepper flakes for extra heat.

Include sautéed mushrooms, spinach, or onions for a vegetable-packed version.

Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
