Ingredients
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup unsalted butter, softened
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract (optional)
1/4 cup white sugar for rolling
Instructions

Preheat oven to 375°F (190°C).

In a medium bowl, mix together the flour, baking soda, and baking powder. Set aside.

In a large bowl, cream together the butter and 1 1/2 cups sugar until smooth.

Beat in the egg, vanilla extract, and almond extract (if using).

Gradually add the dry ingredients, mixing until just blended.

Divide the dough into 2 portions and wrap each portion in plastic wrap. Refrigerate for at least 1 hour or until firm.

Roll out the dough on a lightly floured surface to about 1/4 inch thick. Use cookie cutters to cut into desired shapes.

Place cookies onto ungreased baking sheets. Sprinkle with sugar.

Bake for 8-10 minutes, or until edges are lightly golden.

Allow the cookies to cool on the baking sheets for 2 minutes before transferring to wire racks to cool completely.
 
Notes
You can experiment with different extracts (like lemon or almond) for unique flavors.
Add food coloring for a festive touch.
To make them even more indulgent, drizzle with royal icing or a simple glaze after baking.
