Ingredients
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups whole milk
1 cup cheddar cheese, grated
1 cup Monterey Jack cheese, grated
Salt, to taste
Pepper, to taste
Garlic powder, optional
Paprika, optional
Cayenne pepper, optional
Instructions
- Melt the butter in a medium saucepan over medium heat until fully liquefied.
- Whisk in the flour and cook for 1–2 minutes, stirring constantly, until bubbly and lightly golden to form a smooth roux.
- Gradually pour in the milk while whisking continuously to keep the mixture smooth and lump-free.
- Continue cooking and stirring frequently until the sauce thickens and begins to gently bubble.
- Remove the saucepan from the heat and stir in the grated cheddar and Monterey Jack cheeses. Mix until fully melted and smooth.
- If the sauce is too thick, add a small splash of milk and stir until the desired consistency is reached.
- Season with salt, pepper, and any optional spices. Taste and adjust seasoning before serving warm.
Notes
For a sharper flavor, use sharp cheddar instead of mild.
Add extra cayenne pepper or a splash of hot sauce for more heat.
Stir in a pinch of smoked paprika for a smoky twist.
A small handful of Parmesan can add deeper flavor.
Store in an airtight container in the refrigerator for up to 4 days.
Reheat gently over low heat, adding a splash of milk to restore creaminess.
