Description

These Vanilla Muffins are soft, fluffy, and bursting with vanilla flavor. Perfect for breakfast or a snack, with optional almond extract for added depth.


Ingredients

1 1/2 cups all-purpose flour

3/4 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup milk

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon almond extract (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat together the melted butter, milk, eggs, vanilla extract, and almond extract (if using).
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix the batter.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

These muffins can be stored in an airtight container at room temperature for up to 3 days.

For longer storage, freeze the muffins in a zip-top bag or airtight container for up to 3 months.

To reheat, microwave for 20-30 seconds or bake at 350°F (175°C) for 5-10 minutes.
