Description

Ingredients

For the Peanut Butter Mousse:

1 cup creamy peanut butter

1/2 cup coconut milk (or almond milk)

1/4 cup maple syrup

1 teaspoon vanilla extract

1/4 teaspoon salt

For the Chocolate Ganache:

1/2 cup dark chocolate chips

2 tablespoons coconut milk (or almond milk)

1 tablespoon maple syrup


Instructions

  1. In a medium mixing bowl, whisk together the peanut butter, coconut milk, maple syrup, vanilla extract, and salt until smooth and creamy.

  2. Spoon the peanut butter mousse into serving cups or bowls, and smooth the top with the back of a spoon.

  3. For the chocolate ganache, place the dark chocolate chips and coconut milk in a small saucepan over low heat. Stir constantly until the chocolate is melted and smooth.

  4. Remove from heat, and stir in the maple syrup until fully combined.

  5. Spoon or drizzle the chocolate ganache over the peanut butter mousse in each cup, spreading it evenly.

  6. Refrigerate for at least 1 hour to allow the mousse to set and the ganache to firm up.

  7. Once ready to serve, garnish with crushed peanuts or a sprinkle of sea salt if desired.

Notes

For added texture and flavor, top with crushed peanuts, chocolate shavings, or caramel sauce.

Store leftovers in the refrigerator for up to 3 days.

Can be made ahead by storing in the fridge for up to 2 days before serving.
