Description
A quick and flavorful Middle Eastern-inspired flatbread pizza topped with za’atar spice, creamy cheeses, fresh vegetables, and herbs. Crispy, aromatic, and vegetarian-friendly—perfect for a weeknight meal or appetizer.
Ingredients
1 flatbread or naan (store-bought or homemade)
2 tablespoons olive oil
1 1/2 tablespoons za’atar spice blend
1/2 cup shredded mozzarella cheese
1/4 cup crumbled feta cheese
1/4 red onion, thinly sliced
1 small tomato, thinly sliced
1/4 cup chopped fresh parsley or mint
Optional: crushed red pepper flakes or sumac, for extra flavor
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Place the flatbread on the prepared baking sheet.
- In a small bowl, mix the olive oil and za’atar spice blend until well combined, then brush the mixture evenly over the flatbread.
- Sprinkle mozzarella and feta cheese evenly over the top.
- Layer on the red onion and tomato slices.
- Bake for 8–10 minutes, or until the cheese is melted and the edges are golden and crisp.
- Top with fresh parsley or mint after baking.
- Optional: sprinkle with crushed red pepper flakes or sumac for added flavor.
- Slice and serve warm.
Notes
Use store-bought naan or any flatbread for convenience.
Swap feta with goat cheese, ricotta, or cheddar for variety.
Add kalamata olives, roasted red peppers, or cucumbers for extra flavor and texture.
To add protein, top with shredded chicken or a fried egg.
Store leftovers in the fridge up to 2 days and reheat in oven for crispiness.
