It's packed with flavor, healthy ingredients, and is ready in just a few simple steps. Whether you serve it over rice, noodles, or cauliflower rice, it's a meal that's sure to satisfy!

Quick & Easy Chicken Stir-Fry

Ingredients

For the Stir-Fry:

2 chicken breasts, thinly sliced

1 tablespoon cornstarch (for extra tenderness)

1 tablespoon soy sauce

1 tablespoon oil (sesame or vegetable)

1 cup broccoli florets

1 red bell pepper, sliced

1 carrot, julienned

½ onion, sliced

2 cloves garlic, minced

1 teaspoon ginger, grated

For the Stir-Fry Sauce:

¼ cup soy sauce

1 tablespoon honey or brown sugar

1 tablespoon rice vinegar

1 teaspoon sesame oil

½ teaspoon red pepper flakes (optional, for spice)

1 teaspoon cornstarch mixed with 2 tablespoon water (for thickening)

(Tip: You'll find the full list of ingredients and measurements in the recipe card below.)

Directions

Marinate the Chicken: Toss sliced chicken with 1 tablespoon soy sauce and cornstarch. Let sit for 10 minutes to marinate.

Cook the Chicken: Heat 1 tablespoon oil in a pan over medium-high heat. Add chicken and cook for 4-5 minutes until golden brown and cooked through. Remove from the pan and set aside.

Stir-Fry the Veggies: In the same pan, add minced garlic and grated ginger. Sauté for 30 seconds until fragrant. Add onion, bell pepper, broccoli, and carrot. Stir-fry for 3-4 minutes until the veggies are crisp-tender.

Make the Sauce & Combine: Stir in the cooked chicken and pour in the stir-fry sauce. Cook for 1-2 minutes until the sauce thickens.

Serve & Enjoy: Serve the stir-fry over steamed rice, noodles, or cauliflower rice. Enjoy the savory goodness!

Servings and Timing

Servings: 4

Total Time: 25 minutes

Variations

Add extra crunch: For some added texture, I like to toss in a handful of cashews or peanuts.

Change the protein: This recipe is versatile, so you can swap the chicken for shrimp, beef, or tofu to suit your preferences.

Spice it up: If I want more heat, I simply add extra chili flakes or a dash of Sriracha to the sauce.

Storage/Reheating

This chicken stir-fry can be stored in an airtight container in the fridge for up to 3 days. To reheat, simply warm it up in a skillet over medium heat until heated through. I sometimes add a splash of water or soy sauce to keep the stir-fry moist when reheating.

FAQs

How can I make this recipe gluten-free?

To make this dish gluten-free, simply use tamari instead of soy sauce and ensure your cornstarch and other ingredients are gluten-free certified.

Can I use frozen veggies in this stir-fry?

Yes, frozen veggies will work fine for this recipe. Just make sure to thaw them before adding them to the pan to avoid extra moisture.

Can I skip the cornstarch?

If you don't have cornstarch, you can skip it. The chicken might not be as tender, but it will still cook perfectly. You could also use arrowroot powder as an alternative.

How do I make the stir-fry spicier?

If you want to add some spice, I recommend increasing the red pepper flakes in the sauce or adding a spoonful of Sriracha to the mix.

Can I make this recipe in advance?

Yes, you can prep the chicken, veggies, and sauce ahead of time. When ready to cook, just follow the directions and stir-fry everything together for a quick, delicious meal.

Conclusion

This quick and easy chicken stir-fry is one of my favorite go-to meals for busy weeknights. It’s a perfect balance of savory, sweet, and spicy, with a satisfying mix of chicken and veggies. Plus, it's super adaptable, so I can change up the ingredients depending on what I have on hand. Whether for a busy weeknight or a relaxed weekend dinner, this stir-fry is always a hit.
