This cucumber, onion, and tomato salad is a fresh and vibrant side dish that’s incredibly easy to make. Ingredients

2 cups cucumbers, thinly sliced (peeled if desired)

2 cups cherry tomatoes or diced tomatoes

½ red onion, thinly sliced

2–3 tbsp white vinegar or apple cider vinegar

Salt & pepper to taste
